INGREDIENTS
- Sponge cake:
Makes 1 plate measuring 30 x 40 cm / 3 discs measuring 20 cm.
- – Brown sugar 250 g.
- – Egg 5 items.
- – Salt 1 pinch.
- – Flour 0000 250 g.
- – Milk 125 cc.
- – Butter 80 g.
- – Vanilla essence to style.
- – Grapes reduce in half with out seeds.
- For the white chocolate ganache:
- – Crema 200 cc.
- – Chocolate blanco 300 g.
- – Crema 400 cc.
- Candy compote:
- – Grapes reduce in half with out seeds 250 g.
- – Sugar 100 g.
- – Agar agar o gelatina 5 g.

PROCEDURE:
Sponge cake:
1. Soften the butter and add the nice and cozy milk. Hold at room temperature.
2. Beat the sugar with the eggs and salt till prepared. Add the encompassing flour. Taste with vanilla and lemon zest.

1. Warmth the grapes with the sugar. Add the agar and blend. Boil
throughout a minute.
2. Carry to chill.
