WELSH CAKE WITH CREAM

INGREDIENTS

  • For the mass:

  • – 250 g flour 0000
  • – 1 tablespoon of baking powder
  • – 100 g manteca⁣
  • – 80 g azúautomobile⁣
  • – 2 yemas⁣
  • – 2 or 3 tablespoons of milk (if needed)
  • For the filling:

  • – 500 g crema⁣
  • – 4 tablespoons of sugar 100 g
  • – 3 small egg whites
  • – 1 handful of raisins (non-compulsory)⁣
  • – One tablespoon of cornstarch ⁣

PROCEDURE:

1. For the dough: Sand with the butter, flour and sugar.
2. Add the two yolks and the milk if needed. Knead little or no and place wrapped within the fridge for no less than half-hour. Stretch with floured dough till it reaches a thickness of 4 mm, line a greased and floured tart pan.⁣
3. Pre-cook the dough at 180 levels for five minutes.
4. For the filling: Dissolve the cornstarch in two tablespoons of cream, add the remainder of the elements with out beating, simply combine. Sift the combination over the dough. The peak of the cream shouldn’t exceed 2 cm. ⁣
5. To bake: Bake in a VERY LOW oven (120/130º C), till the dough is barely golden brown (approx. 40 – 50 min). It will be significant to not rush the cooking.
6. Let it cool with out eradicating it from the mildew, contained in the oven after which put it within the fridge.
