INGREDIENTS
- Sponge:
- – Flour 300 g.
- – Contemporary yeast 50 g.
- – Water at 15ºC 240 g.
- Remaining time:
- – Flour 700 g.
- – Sugar 250 g.
- – Butter 250 g.
- – Eggs 3 items.
- – Milk 110 cc.
- – Honey 50 g.
- – Sal 5 g.
- – Vanilla extract 10 g.
- – Almond essence 5 g.
- Marzipan:
- – Almond flour 320 g.
- – Widespread sugar 320 g.
- – Egg 90 g (roughly 2 items).
- – Almond essence 5 g.
- Decor:
- – Sliced almonds 150 g.
- – Granulated sugar 100 g.
- – Candied oranges c/n.
- – Syrup to color.
For this Easter: ROSCA WITH MARZIPAN with almond flour, candied oranges and syrup
PROCEDURE:
1. Make a sponge, mixing all of the components and let it ferment for 1 hour, at room temperature. Don’t put close to warmth.
2. Knead the sponge, eggs, milk, honey, vanilla extract, almond essence, sugar and flour till the components are mixed and there aren’t any unhydrated components.
3. Let it relaxation for 20 minutes, add the salt, and knead till the gluten is nicely developed, and add the chilly butter.
4. Place the dough in a container lined with plastic. Let it relaxation for 1 hour.
5. Divide into 400 g parts, ball and let relaxation for half-hour.
6. Stretch with a rectangular-shaped stick and prepare at one finish in a marzipan roll, roll up, coat in slivered almonds and form right into a donut.
7. Place on plates, and let ferment nicely lined in order that the floor doesn’t dry out.
