STUFFED QUAD PAIL

INGREDIENTS

  • – 1 rump tail.
  • – Garlic 8 cloves
  • – Parsley 1 massive handful
  • – Mushroom 200 g
  • – Grated cheese 100g
  • – Salvia
  • – White wine
  • – Butter 50 g
  • Garrison:
  • – Zucchini 4 models.
  • – Onion 3 models.
  • – Inexperienced 3 branches.
  • – Salt, pepper and nutmeg.
  • – Eggs 4 models.

PROCEDURE:

1. For the filling, chop the mushroom into brunoise and sauté with a bit of butter. Flip off the warmth and add parsley and chopped garlic (quite a bit). Let cool and add the cheese.

2. Fill the meat with the combination and seal it in a pan on either side. Place in a bag to prepare dinner within the oven together with the white wine, butter and sage. Shut and put within the oven for 20 minutes.
3. Take away from the oven and let it relaxation for 10 extra minutes. Then, open the bag, take away the meat and reserve the cooking juices.

4. For the zucchini, sweat the onion along with the zucchini with out the lid till they’re tender. Season and eventually add the eggs. Prepare dinner till the egg is cooked.

5. Serve the rump tail reduce into wheels together with the scrambled eggs.
