SQUARE AND MOIST LEMON WITH RICE FLOUR

INGREDIENTS

  • Rinse 20×20 cm mould.
  • Lemon squares:
  • – Flour 0000 130 g.
  • – Sugar 130 g.
  • – Butter 100 g.
  • – Eggs 2 models.
  • -Zest of 1 lemon.
  • – Lemon juice 4 tbsp.
  • Glazed:
  • – Impalpable sugar 100 g.
  • – Lemon juice c/n.
  • Lemon Moisture WITHOUT FLOUR:
  • – Egg 1 unit.
  • – Melted butter 50 g.
  • – Milk 375 cc.
  • – Lemon juice 30 cc.
  • – Lemon zest.
  • – Grated coconut 60 g.
  • – Rice flour 60 g.
  • – Sugar 120 g.
  • – Salt 1 pinch.

PROCEDURE:

Lemon squares:
1. For the dough, combine the flour with the sugar, salt and the chilly cubed butter to make a sandblasting.
