INGREDIENTS
- – 350 g of 000 bread flour.
- – 150 g of stone-ground 000 wholemeal flour.
- – 50 g of stone-ground 00 complete wheat flour.
- – 5 g of rye bran.
- – 5 g of candial salvage.
- – 20 g of soaked durum wheat grain.
- – 350 cc of water.
- – 125 g of sourdough.
- – 11 g of sea salt.

Process:
1.Combine the flours with the water and the sourdough. Replace half-hour. Then add the salt and incorporate it little by little, between two to a few folds.
2.Let the dough relaxation in block for two and a half hours.
3.Decrease the dough onto the counter, give it the ultimate form and take it to a canvas to ferment for 18 to 24 hours.
4.Preheat oven to not more than (250/300°C).
Ideally in a discipline forged iron pot, cook dinner for 40/45 minutes till you hit the underside and it sounds hole.
