INGREDIENTS
- -Yolks 6 models.
- -Sugar 6 tbsp.
- -Port 6 tbsp.
- -Oranges 6 models.
- -Tangerines.
- -Pomelos.
- -Sugar.
- -Ron.
- -Chopped chocolate C/N.
1.Put the yolks in a bowl with the sugar and port.
2.Beat for a minute till foaming off the warmth.
3.Place the bowl in a bain-marie and proceed beating till a sustained foam varieties and the underside of the bowl is seen.
4.Peel the citrus fruits and lower them into thick slices. Caramelize the citrus slices on the disc, rolling them in a little bit sugar earlier than putting them on the recent disc. Flambé with a little bit rum.
5.Prepare the citrus slices on a plate and pour the sambayon on high. End with chopped chocolate.
