ROASTED CABUTIAS WITH GREMOLATTA + SALADS

INGREDIENTS

  • • – Cabutia squash 1 unit.
  • • – Salt and pepper.
  • • – Olive oil.
  • Gremolata:
  • • – Basil leaves 3 tbsp.
  • • – Parsley 3 tbsp.
  • • – Chopped garlic 1 tbsp.
  • • Grated cheese 1 tbsp
  • • – Toasted pumpkin or sunflower seeds.
  • • – Lemon juice and zest 1 unit.
  • • – Olive oil.
  • • – Salt and pepper.
  • Salad
  • • Pumpkin 1
  • • Onion 2 u
  • • Sugar 1 tbsp
  • • Aceto 4 tbsp
  • • Cumin / koreandro
  • • Salt and pepper
  • • Oil
  • • Nutmeg
  • • Cooked lentils 300
  • • Spinach leaves
  • • Cashew nuts
  • • Salt and pepper

Do you wish to be taught a special means of consuming pumpkin? Then this recipe is for you:

1. Reduce the pumpkin into wedges, place in a bowl with a bit of oil, salt and pepper. Cook dinner in a powerful oven for 20 minutes.
2. For the gremolata, chop the parsley, basil, garlic, grated cheese and blend with the lemon juice and zest, olive oil, season with salt and pepper and eventually add the toasted seeds.
3. Serve the wedges with the gremolata on high.

For the salad

  • Reduce the pumpkin cubes.
  • Place the sugar and vinegar in a bowl with the spices and blend nicely.
  • Place in a powerful oven till cooked (however don’t disassemble)
  • Combine the pumpkin cubes with lentils, the spinach leaves and the cashews and season and serve.
