Eggs, 4
Mayonnaise (whether it is home made mayonnaise it vastly improves the flavour) ½ cup
Garlic, 2 cloves
Parsley, 1 sprig
Olive oil, 2 tablespoons
Salt to style
Preparation
– Peel the potatoes and reduce them into cubes roughly 2 cm on all sides.
– Boil the potatoes in loads of water with a handful of coarse salt, till they’re cooked, about 10 minutes or so.
– Take away the potatoes, drain nicely.
– When the potatoes develop into heat, season with oil and a bit of salt.
– Make the eggs hard-boiled for 10 minutes.
– Cool the eggs with chilly water.
– Peel the hard-boiled eggs and reduce them into slices.
– Finely chop the parsley leaves, discarding the stems.
– Peel the garlic cloves, reduce them in half, take away the central sprout and chop them.
– When the potatoes are chilly, add the hard-boiled eggs, garlic, parsley and mayonnaise.
