Queso mantecoso or mozzarella, 250g
Butter, 50g
Flour, breadcrumbs and oil for frying, as wanted
Salt and pepper to style
Preparation
– Boil the potatoes with the peel.
– When the potatoes are tender, take away and peel.
– Mash the potatoes and add the butter and yolks.
– Combine very properly, season with salt and pepper.
– Let it cool and put it within the fridge for not less than two hours.
– Minimize the cheese into cubes about 2 cm on either side.
– Assemble the croquettes by inserting a chunk of cheese within the heart.
– Dredge the potato croquettes in flour, then in crushed egg and at last in breadcrumbs.
– Put the potato croquettes within the fridge for an hour.
– Fry in loads of scorching oil till golden.
– Drain with absorbent paper and serve.
