PORK RIBS A LA VILLEROY WITH PEAS AND POTATOES

INGREDIENTS

  • 4 models of Pork Ribs.
  • 25 gms of butter.
  • 25 gms of flour.
  • Leche 250cc
  • 1 egg.
  • Bread crumbs.
  • Peas 50 gms.
  • 2 cloves of minced garlic.
  • Fried wedge potatoes.
  • Salt, pepper and nutmeg.
  • Oil for frying.

1-Pound the ribs, season with salt and pepper.
2-Make a white sauce. When it cools, add an egg and blend properly. Bathe the ribs
within the sauce and cross by way of breadcrumbs. Put within the fridge and fry.
3-Accompany with peas sautéed with garlic and olive. And potatoes lower into fried wedges.
