pickled eggplants

INGREDIENTS

  • – Eggplants 4 models.
  • – Coarse salt.
  • – Vinegar 2 cups.
  • – Water 3 cups.
  • – Black pepper and bay leaves.
  • – Parsley, garlic and paprika.
  • – Small onion.
  • – Floor chili.
  • – Oil.

pickled eggplant with bell pepper jam , a traditional with a scrumptious jam!

PROCEDURE:

1. Peel the eggplants and reduce into rounds.

2. Place them in a strainer with coarse salt.

3. Then, put together a pot with the water plus vinegar and peppercorns. Prepare dinner the eggplants, then drain and allow them to cool.
