INGREDIENTS

  • For the mass:
  • – Flour 0000 500 g.
  • – Sugar 100 g.
  • – Positive salt 5 g.
  • – Recent yeast 40 to 60 g.
  • – Water 255 cc.
  • – Butter 50 g.
  • Armed:
  • – Flour 0000 further 400 g.
  • – Black sugar 600 g.
  • – Brown sugar 600 g.

PROCEDURE:
1. Place the flour, sugar and salt in a bowl. Mingle. Add the yeast
shelled
2. Hydrate with water with out forming a ball, and add the butter. End mixing and knead for five minutes.
3. Stretch with a stick with 1 cm thick and fold. Stretch once more to six mm.
4. Let it chill out coated for five minutes. Minimize with a 6 cm diameter cookie cutter.
5. Grease a baking tray and organize the disks of dough alternately. Cowl the discs with flour, masking every hole between disc and disc (see pictures)
6. Moisten the floor of every disc with water, place a pinch of black sugar.
7. Alternatively, combine the remaining black sugar with two tablespoons of flour, and canopy every pancake with the combination, forming a cone.
8. Let it rise till the sugar is flat on the floor.
9. Cook dinner in a preheated oven at 150ºC for 12 minutes. It is best to calmly brown the highest facet of every pancake.
