OSSOBUCO WITH WHITE WINE

INGREDIENTS

  • – Ossobuco (8×5 cm) 6 items.
  • – 75 g of flour.
  • – Sea salt.
  • – Freshly floor pepper.
  • – 115 g of butter.
  • – 2 tbsp olive oil.
  • – 2 pink onions reduce thinly.
  • – 4 stalks of celery reduce thinly
  • – 4 cloves of garlic, sliced.
  • – 9 anchovies.
  • – Half a bottle of dry white wine.
  • Gremolata:
  • -Zest of two lemons.
  • – 1 clove of garlic, finely chopped.
  • – 3 beneficiant tbsp chopped parsley.

Delight your self with this spectacular dish with anchovies and gremolata

PROCEDURE:
1. Preheat the oven to 150ºC.
2. Dredge the ossobuco items in flour and season them with salt and pepper.
3. Brown the meat on either side in a heavy-bottomed pot with the oil and half of the butter.
4. As soon as browned, we take away the meat and eliminate the fats that continues to be within the pot.
5. Add the opposite half of the butter and sauté the onion and celery. Let it grow to be comfortable and tender however don’t brown. Add the garlic and anchovies, with a wood spoon or a masher we mash / crush the anchovies till they soften, this solely takes a number of seconds.
