PROCEDURE:
1. Begin by inserting the ossobuco wheels in a baking dish together with the celery, carrot, and leek. Season, moisten with broth, cowl with aluminum and prepare dinner in a robust oven for 3 hours (management the liquid).
2. For the puree, boil the potatoes in chilly water and mash them along with butter, eggs, yolks, salt, nutmeg and pepper.
3. To assemble, crumble the ossobuco and blend with the cooking inventory. Make a base of meat, sliced olives, chopped hard-boiled eggs and canopy with mashed potatoes.
4. Sprinkle with sugar and bake within the oven.
