INGREDIENTS
- For the bear buco:
- – Ossobuco 3 models (for 4 individuals).
- – Vino tinto 1 L.
- – Tomato extract.
- – Meat broth or water 1 L.
- – Orange peel 1 strip.
- – Lemon peel 1 strip.
- – Laurel ½ leaf.
- – Carrot 1 unit (medium).
- – Celery.
- – Onion 1 unit (massive).
- – Leek 1 unit (white half).
- – Garlic 1 head.
- – Olive oil c/n.
- – Salt and black pepper to style.
- – Cornstarch c/n.
- – Water at room temperature.
- – Juniper 4/5 berries.
- Rustic mashed potatoes:
- – Papas.
- – Olive oil.
- – Sal.
- Contemporary salad:
- – Tomatoes.
- – Oregano.
- – Olive oil.
- – Dates (you should use plums).
BRAISED OSSOBUCO WITH RED WINE with rustic mashed potatoes accompanied by a recent salad of tomatoes and dates .. all mega scrumptious! .
PROCEDURE:
1. Warmth the thickest and heaviest pot or saucepan you’ve got. Brown the ossobuco reduce into very thick wheels with somewhat oil and butter.
2. Chop the greens into items and add them to the pot after including the tomato extract with the bay leaves and garlic.
3. Add the purple wine and the juniper (you must take away the berries on the finish of cooking).
4. As soon as the alcohol evaporates, add tomato and season with salt and pepper. Cowl till it boils, take away the lid and let it cook dinner over low warmth for roughly 3 hours. If it foams, take away it with a ladle as a result of it’s what’s going to give bitterness to your broth.
5. For the mashed potatoes , boil complete brushed potatoes from chilly water with a clove of garlic, a contact of bay leaf and salt.
