LENTIL AND SWEET POTATO CAKE

INGREDIENTS

  • – 1 kg candy potato.
  • – ½ onion.
  • – 3 garlic cloves.
  • – 1 purple pepper.
  • – 2 carrots.
  • – 300 g mushrooms.
  • – Additional virgin olive oil.
  • – Pinch of salt.
  • – 400 g cooked lentils.
  • – 400 g tomato sauce.
  • – 1 tablespoon of curry
  • – 1 cdita oregano.
  • – ½ tsp floor black pepper.
  • – 1 tsp garlic powder.
  • – 1⁄2 cdita paprika.

PROCEDURE:
1. Preheat the oven to 200 ºC.
2. For the candy potato, wash nicely and cook dinner within the oven till tender. Puree and season with salt, pepper, butter and garlic powder.
3. In the meantime, chop the onion, garlic, pepper, carrots and mushrooms very finely and sauté them in a frying pan with a splash of additional virgin olive oil for about 10 minutes with a pinch of salt.
4. Add the tomato sauce, lentils, curry and oregano and let every thing cook dinner collectively for quarter-hour, stirring so it does not stick.
5. When it’s prepared, place the candy potato puree in a baking dish, overlaying the bottom and prime nicely and bake for half-hour.
