LAMB WITH CRISPY PEANUT AND CANDY SWEET POTATOES

INGREDIENTS

  • – 1 Rack of lamb (loin with bone).

  • – 200 g of candy potato.
  • – 20 g of butter.

  • Mashed carrots and peas:
  • – 200 g of carrot.
  • – 50 g of peas.
  • – 50 g of milk cream.
  • – Salt and pepper to style.
  • Roasted onion with embers:
  • – Two purple onions.
  • – Two cloves of garlic.
  • – 50 g of oil.
  • – Salt and pepper.

PROCEDURE:
1. Brown the rack of lamb in a frying pan over excessive warmth, mixing the oil with the butter. Season with salt and mint leaves.
