Hare, 1
Carrot reduce into slices, 1
Onion reduce into slices, 1
Parsley, thyme, bay leaf and celery, a couple of sprigs
Salt and pepper to style
Purple wine, ½ liter
White wine, a glass
Oil, 100gr
flour, 1 tablespoon
Broth, 1 cup
Tomato extract, 1 tablespoon
Bacon reduce into sticks 150gr.
Cooked potatoes 500gr
Inexperienced onions, sautéed, 24
Chopped parsley, 1 tablespoon
Fried bread reduce into sticks, 6 slices
Process
– Lower the hare into prey.
– Place in a deep glass or earthenware dish, seasoning it with salt and pepper.
– Add the onion, carrot and fragrant herbs.
– Cowl with purple wine.
– Cowl the supply
– Let marinate within the fridge till the subsequent day.
– Drain the hare on a rack.
– Brown the hare in a pan with oil.
– Add the onion and carrot from the maceration.
– Switch the hare and greens to a saucepan.
– Add the flour, tomato extract, white wine and broth.
– Let it boil with the saucepan lined till the hare is nicely cooked.
– Put the bacon sticks in a saucepan, brown them.
– Add the potatoes and onions.
– Add the hare prey
– Cowl with the hare sauce, beforehand strained.
– Boil the whole lot for a couple of minutes.
– Serve in a deep dish sprinkled with parsley and surrounded by fried bread.
