- Bolognese:
- – Minced meat 500 g.
- – Olive oil c/n.
- – Onion 1 unit.
- – Garlic 3 cloves.
- – Pepper and salt.
- – Tomate 3 unid.
- – Dry mint 1 tbsp.
- – Tomato extract 1 tbsp.
- – Cinnamon 1/2 chopped
- – Crushed tomato 500 cc.
- – Paprika and floor chili.

PROCEDURE:
1. Lower the eggplants into slices and grill them in olive oil with salt and pepper.
2. Lower the potatoes into skinny slices and place within the oven on a plate with olive and salt.
3. For the bolognese, sauté the chopped onion in olive, add the minced meat and garlic. Brown and season.
4. Add the diced tomato with out pores and skin and deglaze with white wine.
5. When the alcohol evaporates, add the dried mint, tomato extract, cinnamon and crushed tomato. Season and cut back for a couple of minutes till thick.
6. To assemble, in an olive-based baking dish, make a potato and eggplant base. Cowl with bolognese, grated mozzarella and make a layer of eggplants. Cowl once more with bolognese and end with white sauce.
7. End with the breadcrumb and grated cheese combination.
