FISH MEDALLIONS WITH SALAD

INGREDIENTS

  • – Mashed potatoes (nicely mashed) 1 kg.
  • – Lemon zest.
  • – Parsley.
  • – Salt and pepper to style.
  • – Fish 700 g.
  • – Butter.
  • – Eggs.
  • – Flour.
  • – Bread crumbs.

We remedy the menu for you with this spectacular dish! Fish medallions with broad bean, pink onion and cherry salad

PROCEDURE:
1. Cook dinner the hake in a pan with butter and olive for a couple of minutes.
2. Make a parsley pesto and blend with mashed potatoes
Crumble and blend nicely with the puree. Chill it for an hour within the fridge.
3. Assemble by hand and kind the medallions. Move them by flour, eggs with salt and pepper after which by breadcrumbs (panko non-obligatory).
4. Fry or bake within the oven.
5. They’ll accompany with a salad! I made one with broad beans, finely chopped pink onion and cherry tomatoes. Dressing with lemon, oil, salt and pepper. On the final minute I added contemporary mint .
