FISH MEDALLIONS

INGREDIENTS

  • Medallions:
  • – Mashed potatoes (nicely mashed) 1 kg.
  • – Lemon zest.
  • – Parsley.
  • – Salt and pepper to style.
  • – Fish 700 g.
  • – Butter.
  • – Eggs.
  • – Flour.
  • – Panko + cornflakes + oats.
  • Tartar sauce:
  • – Mollet egg.
  • – Lemon.
  • – Sunflower oil.
  • – Salt and pepper.
  • – Pickles.
  • – Capers.
  • Meeting for the burger:
  • – Hamburger buns.
  • – Sautéed cherry tomatoes.
  • – Arugula.

FISH MEDALLIONS with tartar sauce on a hamburger, spectacular dish to take pleasure in at house!

PROCEDURE:
1. Cook dinner the hake in a pan with butter and olive for a couple of minutes.
2. Make a parsley pesto and blend with mashed potatoes.
3. Crumble and blend nicely with the puree. Chill it for an hour within the fridge.
4. Assemble by hand and kind the medallions. Dredge them in flour, eggs with salt and pepper after which in panko.
5. Fry.
6. For the tartar sauce, put the mollet egg in a glass together with the lemon juice, salt and pepper, combine and add the oil in a stream till emulsified.
7. Add the preserved cucumbers and chopped capers to the mayonnaise and season with salt and pepper.
8. For the salad, combine all of the elements in a bowl and season.
9. To assemble, serve the burgers with the salads and assemble others with the bread, tartar sauce, arugula, tomato and the medallion.
