EGGPLANT LASAGNA

INGREDIENTS

  • For meeting:
  • – 5 medium eggplants.
  • – Sunflower oil c/n.
  • – Sal.
  • – Pepper.
  • For the pancake batter:
  • – 3 eggs.
  • – 250 grams of 0000 flour.
  • – Milk c/n.
  • – 1 teaspoon salt.
  • – Pepper.
  • – 2 tbsp parsley.
  • – 1 clove garlic.
  • For the tomato sauce:
  • – 1 widespread onion.
  • – 2 cloves of garlic.
  • – Olive oil.
  • – Crushed tomato c/n.
  • – Basil c/n.
  • – Thyme.
  • – Dried oregano.
  • For the filling:
  • – Queso reggianito c/n.
  • – 1 bunch of recent basil.
  • – Muzzarella c/n.

PROCEDURE:

1. For the dough, beat the eggs, add the milk and flour and combine with a wire whisk.
