INGREDIENTS

  • Yeast:
  • – Contemporary yeast 40 g.
  • – Leche tibia 75 cc.
  • – Azúcar 1 cdita
  • – Flour 0000 100 g.
  • Time:
  • – Flour 0000 400 g.
  • – Salt 1 tsp.
  • – Sugar 100 g.
  • – Yolks 2 items.
  • – Eggs 2 items.
  • – Vanilla essence 1 cdita.
  • -Zest of 1 lemon.
  • -Zest of 1 orange.
  • – Cognac a splash.
  • – Orange blossom water (optionally available).
  • – Butter 70 g.
  • – Leche tibia c/n.
  • – Crushed egg to color 1 unit.
  • For the pastry cream:
  • – Milk 1 L.
  • – Sugar 250 g.
  • – Yolks 12 items.
  • – Flour 80 g.
  • – Starch 40 g.
  • – Vanilla essence 1 cdita.
  • To brighten:
  • – Syrup c/n.
  • – Maraschino cherries c/n.
  • – Darkish or white chocolate overlaying c/n.

PROCEDURE:

For the ferment:
1. In a bowl, dissolve the yeast with the nice and cozy milk. Add the sugar, flour and combine.
