CORDOBE TURKISH LOMITO WITH GRID POTATOES AND ARABIC BREAD

INGREDIENTS

  • – Roast beef 500 g.
  • – Roast lid 500 g.
  • – Purple onions 3 items.
  • – Tomates 2 unid.
  • – Lettuce seedling 1 unit.
  • – Heat cheese 250 g.
  • – Parsley and garlic mayonnaise.
  • – Arabic bread.
  • – Sal.
  • – 8 spices.
  • – Grated potatoes 500 g.
  • Arabic bread:
  • – Meals 000 1 kg.
  • – Contemporary yeast 25 g.
  • – Sal 20 g.
  • – 50 cc oil.
  • – Water 400 cc.
  • – Vino 50 g.
  • Mayonnaise:
  • – 1 egg.
  • – 100 cc oil.
  • – 1 clove garlic.
  • – 2 sprigs of parsley
  • Grid potatoes:
  • – Peeled potatoes 500 g.
  • – Oil for frying.

PROCEDURE:

For the loin:
1. Ask the butcher to grind the meat twice.
2. Combine and knead the roast beef along with the roast lid.
3. Then put the meat to marinate for six hours with the 7 spices.
4. Make 130 g buns.
5. Put in a folex, fold and compact the steak. Place within the freezer for about 4 hours.

For the Arabic bread:
1. In a bowl, put the flour, add the salt and the contemporary yeast already activated.
2. Mix with water and wine. Combine with the oil.
3. Knead vigorously, letting it relaxation for 20 minutes.
4. Reduce the dough into 280g buns and let it rise for an additional 20 minutes.
5. Cook dinner in an oven at 180ºC for quarter-hour.

For the caramelized onions:
1. Peel and minimize the onion into feathers.
2. Sauté till caramelized.

For the mayonnaise:
1. In sizzling water over 60ºC, put the egg for about 25 seconds to pasteurize.
2. With a mini blender, blender or by hand, combine the egg, oil, salt, the garlic clove and the two sprigs of parsley. Mix or beat till you might have the specified consistency.

For the grated potatoes:
1. Peel the potatoes, minimize with a mandolin and fry.
