INGREDIENTS
- Merengue:
- – Whites 150 g.

- – Bitter cacao 30 g.
- Armed:
- – Banana.
- – Sugar.
- – Dulce de leche ice cream.
- – Dulce de leche sauce.
- – Roasted peanuts.
COCOA, BANANA AND DULCE DE LECHE ICE CREAM PAVLOVA with meringue!
PROCEDURE:
1. For the meringue, place the egg whites and sugar in a double boiler, mixing continually till the sugar dissolves. It needs to be barely heat (45ºC).
2. Take away from the bain-marie and beat with an electrical mixer at most pace till stiff and add the sifted cocoa and blend in an enveloping method.
3. Place in a pastry bag with a clean quantity 8 or curly nozzle and make little baskets on parchment paper.
4. Put within the oven at 100ºC for about 45 minutes, it ought to come off the paper.
5. Let cool.
6. Caramelize the bananas in a frying pan.
7. To assemble, place the bananas on the bottom of the pavlova, then the ice cream scoops and end with the ice cream sauce and chopped peanuts.
