INGREDIENTS

  • – Almendras 350 g.
  • – Sugar 440 g.
  • – Water 125 cc.
  • – Glucose 90 g.
  • – Honey 250 g.
  • – Whites 50 g.
  • – Ostias 2 leaves.

PROCEDURE:

1. Combine the glucose, sugar and water and produce to 150 ºC.

2. Soften the honey at 130ºC (soften the sugar first and when it reaches 120, soften the honey).

3. Whereas the honey and sugar are heating, beat the egg whites at low pace with 20 g of sugar.

4. When the syrups are prepared, beat the egg whites sooner and add the honey syrup first and the sugar syrup later.
