INGREDIENTS
- – Semi-sweet chocolate coating 300g.
- – Milk cream 400gr.
- – Yolks 2 items.
- – Eggs 2 items.
- – Sugar 150gr.
- – Water 50cc.
- At your service:
- – Toasted almonds.
- – Salt flakes.
1.Soften the chocolate in a double boiler.
2.Beat the cream to medium level and put aside.
3.Make a syrup with the sugar and water till it reaches 118°C or medium ball level. When the syrup begins to boil, start to beat the eggs and yolks. As soon as the eggs and yolks start to foam, add the syrup at 118°C within the type of a thread. Incorporate utterly and beat till the temperature drops.
4.Add the egg combination to the melted chocolate. Lastly, add the semi-whipped milk cream.
5.Serve in glasses with toasted almonds and sea salt, and eat!.
