BANANA, DULCE DE LECHE AND WALNUT CAKE

INGREDIENTS

  • For the biscuits:

    makes 4 20 cm discs.

  • – Butter 300 g.
  • – Frequent sugar 95 g.
  • – Brown sugar 95 g.
  • – Honey 75 g.
  • – Eggs 3 items.
  • – Yolks 2 items.
  • – Ripe bananas 2 small items.
  • – Whites 2 pcs.
  • – Flour 0000 260 g.
  • – Baking powder 15 g.
  • – Chopped walnuts 120 g.
  • For the ddl cream:
  • – Cream cheese 600 g.
  • – Ddl pastry chef 150 g.
  • For the caramelized nuts:
  • – Walnuts 150 g.
  • – Clear 1 unit.
  • – Frequent sugar 1/2 cup.
  • For meeting:
  • – Dulce de leche pastry chef 1 kg.
  • – Coconut flakes or grated c/n.

PROCEDURE:
Biscuit:
1. Beat the tender butter with the sugar, add the honey, eggs and yolks, proceed beating. Add the mashed bananas.
2. Beat the egg whites till stiff and alternate with the dry substances (flour and powder) with enveloping actions.
3. Lastly add the chopped walnuts.
4. Grease the 20 cm molds and distribute the combination into 4 molds.
5. Bake at 170ºC for roughly quarter-hour.
6. Let cool and unmold.

For the caramelized nuts:
1. Combine the walnuts with the egg whites and sugar in a bowl.
2. Drain effectively and place on a silicone plate.
3. Put within the oven till toasted and caramelized. Let cool.

For the cream cheese:
1. Combine the cheese with the candy
2. Reserve within the fridge.
