BAKED GOAT WITH EGGPLANT AND MUSHROOM LASAGNA

INGREDIENTS

  • Goatling:
  • – 1 again leg or paddle.
  • – 1 onion.
  • – 1 carrot.
  • – 2 cloves of garlic.
  • – 500 cc of white wine
  • – Spices.
  • – 100 g of butter
  • Lasagna:
  • – 2 eggplants.
  • – 2 tomatoes.
  • – 2 cloves of garlic.
  • – 200 g of mozzarella.
  • – Recent basil.
  • – Recent thyme.
  • Girgolas:
  • – 250 g of oyster mushrooms.
  • – 1 purple onion.
  • – 100 cc of apple cider vinegar.
  • – 100 g of sugar.
  • – Grain mustard.
  • – Recent thyme.
  • – Recent rosemary
  • – Parsley.

From Córdoba, we convey you this recipe for baked goat, accompanied by eggplant and mushroom lasagna, tremendous scrumptious!

PROCEDURE:

1. Place the leg within the oven at 280°C with the roughly lower greens till golden brown.
2. Then add one half white wine and one half water with the spices.
3. Let it cook dinner at 180°C for half an hour.
4. Emulsify the top of cooking with butter and sauce.

Lasagna:
1. Lower the eggplants into slices and grill. Lower the tomatoes with seeds and pores and skin into roughly 2 x 2 squares and sauté with olive oil and garlic.
2. Assemble the lasagna with eggplant, tomato and mozzarella. Put within the oven till gratin.

Girgolas:
1. Harvest the gargolas and grill.
2. Pickle the onion with vinegar and blend with recent herbs.
