APPLE CRUMBLE

INGREDIENTS

  • Damaged mass:
  • – Impalpable sugar 200 g.
  • – Tender butter 300 g.
  • – Flour 0000 500 g.
  • – 4 yolks.
  • – Lemon zest.
  • Apples:
  • – Roughly 8 apples peeled and minimize into cubes or slices.
  • – Floor cinnamon 1 tbsp.
  • – Ginger 1 tsp.
  • – Juice of 1 lemon.
  • – Sugar 1 cup.
  • – Pinch of salt.
  • – 20 g of cornstarch.
  • Crumble:
  • – Sugar 1 tbsp.
  • – Harina 0000 1 cda.
  • – Pinch of cinnamon.
  • – Ginger 1 tsp.

APPLE CRUMBLE with shortcrust pastry and apples with cinnamon, ginger and sugar.

PROCEDURE:

1. Warmth the apples with the sugar, lemon juice and zest for extra taste.
2. As soon as tender, pressure and add cinnamon, ginger, salt and starch. combine and reserve
3. For the dough: Work the butter, flour and powdered sugar along with your arms. When a sandy dough types, add salt and yolks and mix with out kneading. (Cornet assist) Let it relaxation. You may stretch it or press the ring along with your arms.
4. Assemble: Line bases and partitions with the dough in a 24cm ring or mould, minimize the remaining dough (chilly) into small squares and add the crumble elements.
5. Add the apples to the mould and put the crumble on high
6. Cook dinner in oven at 160 levels for 45 minutes, roughly 1 hour.
7. Sprinkle with powdered sugar. Serve chilly.
